Marcos grew up in Chicago and attended University of Illinois Chicago after graduating from his school. He eventually attended the Cooking and Hospitality Institute of Chicago and took a job with a top Chicago restaurant where he worked for eight years. Working every station, he learned the restaurant industry’s in’s and out’s before opening Taqueria Chignon with his other two friends.
